What Is Condensed Milk?

You possibly notice that condensed milk is actually just evaporated milk with sugar. Well, you’re right and instead of sterilized, this product is preserved by the high content of sugar which increases the osmotic pressure to a degree where it’s microbiologically secure. Sugar is either incorporated into the milk prior to the evaporation process or directly into the evaporator as a sugar syrup.

Why Condensed Milk Is Popular On Desserts?

Condensed milk is popular in desserts because it offers a creamy, sweet flavor that can’t be duplicated by liquid milk. Due to its low moisture content, it prevents the formation of fructose and glucose, the monosaccharides that cause the creation of undesirable sticky confections. The milk fat in condensed milk may provide a unique taste to desserts as well as offering good texture and smooth palate.
