- 1 cup sugar
- 1/2 cup margarine or butter, softened
- 2 eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt (optional)
- 1 cup buttermilk OR 1 tablespoon lemon juice or vinegar plus milk to equal 1 cup
- 2 tablespoons sugar
- 1 tablespoon ground cinnamon
- 1 cup powdered sugar
- 2 tablespoons milk or cream
- 1/4 teaspoon vanilla extract or almond extract (optional)
Heat oven to 350 degrees F (325 degrees F for glass baking dish).
Grease the bottom only of a 9×5-inch loaf pan with shortening or cooking spray.
In a large bowl, beat 1 cup sugar and margarine with an electric mixer on medium speed until creamy.
Add eggs and 1 teaspoon of vanilla; beat well.
On low speed, beat in flour, baking powder, and baking soda alternately with buttermilk just until the mixture is evenly moistened.
Reserve 1 cup of the batter; set aside.
To the remaining batter in the bowl, add all Cinnamon Filling ingredients; stir gently until well mixed. Pour half of the batter into the pan.
Spoon reserved batter by tablespoonfuls over batter in the pan, leaving about 1 inch between spoonfuls (batter will be thick).
Top with remaining batter; spread evenly over spoonfuls of batter using a spatula.
Gently swirl the top layer of batter with the handle of a wooden spoon for a marbled design, if desired.
Bake for 55 to 65 minutes or until a toothpick inserted near the center comes out clean.
Cool for 10 minutes before removing from pan to wire rack.
* In a small bowl, mix all glaze ingredients until smooth; drizzle over cooled bread.
Allow glaze to set before slicing bread.
Slice and serve warm or cool completely.
Store in a tightly covered container at room temperature for up to 5 days.
